Yeah, we will. She wouldn't randomly face stab anyone... Although she would really, really have to resist to not show her dominance over anyone that looks at her in the wrong way.
Exceptions being Team 7, seeing as she's befriended them.

If we choose to decline any sort of merging, I'm guessing that the only ways to get rid of old Shiko is to either get the railgun extracted (kills us), or possibly getting some help from Erika?

Current Shiko's stats are in the databook. Old Shiko has slightly higher strength, ninjutsu, stamina and genjutsu (mainly because defense), current Shiko has higher... Handseals.

Would the fight even be winnable? Old Shiko is stronger than us, likely more experienced with combat, and has no qualms with going all out from the start...

Hmm, how much higher are her stats? We may not be able to beat her in kinetic techs, but with suiton and that necklace we may be able to edge out a win if her stats aren't too superior. We will have the buff from the necklace, right?
Also, does her versions of the kinetic techs we have have a better effect? Main one I'm worried about is Earthrender. So long as it isn't any faster than ours is, it should be manageable.
If we do fight her, is one of the possible outcomes old Shiko being gone for good?

A, let us not pussyfoot around on this. We aren't going to be a raging bitch like old Shiko, and the amount of Bitch we do get we can work down through time and willpower. The only real downside is how some people might react to us 'remembering' that stuff instead of being a completely different person for all intents and purposes. But even then, we keep showing we are still changed and that problem will be solved.

Unless I am completely wrong and bitch shiko isn't the kind to go 'good will power, maybe you aren't a wimp afterall' if we randomly kick her in the face.

Picking A. There really isn't much else I want to go for. I think I know what we could get out of fighting her, but I don't think that it would be totally worth it when it was all said and done. Imho.
By merging I think we'd be like a Vegetto of sorts, cocky as hell but with enough power and battle smarts to offset it/back it up. And it's not just power, I believe we'd get back that swagger we were going for back in the first arc, which we haven't really found until now. Like, we'd need to refine our personality a bit but that's a lot easier when we're not fighting for our lives every 2 turns.

Well, we'd get increased resolve from having to fight someone better than us and I'd think we would get a crash course on how to use some of our abilities properly. Although those might be wrong, and I'm thinking that there's something else that I'm completely missing.
Basically Old!Shikoro is a mirror of New!Shikoro, but New Shiko's stats are pretty much a reallocation of her old ones. Our potential is spread out in a bunch of different areas as opposed to focused on mostly one like with Old!Shikoro.
And one more thought. Old!Shikoro can tap into at least part of her latent potential at will and has [slightly] better control over the CS which I'd still like to do away with. She would also have a better grasp over the railgun.

Where are we not being given a choice? If we don't like the idea of her personality being altered we are free to vote for a different choice. It isn't like he is saying 'Bitch Shiko eats your personality and takes it's place the moment Touma touches you'.
